MPM

It's back to a normal week of meal planning and preparation. Something tells me the next few weeks are going to be pretty busy with one thing or the other going on.

My hubs has recently complained that I haven't cooked anything "normal" in awhile. He's all about a simple dinner that does not contain some crazy concoction casserole. Hopefully this week will be more "normal" for him.

Monday- Chicken Fettuccine salad and french bread.

Tuesday- Meatloaf, scalloped potatoes and green beans

Wednesday- Fried Rice

Thursday- Leftovers or Fried Catfish

Friday- I'm getting gussied up and going out with hubby to his office Christmas party.

MPM

Sunday-Thankfully hubs let me order pizza..online of course, my favorite way of ordering pizza.

Monday- Roast in the crockpot

Tuesday- White Chili- didn't have it last week, kept forgetting to soak beans.

Wednesday- Hopefully we'll have plenty of leftovers between beans and roast.

Thanksgiving prep-
Pumpkin Bread
Country Green beans. None of my boys (including the big boy) will eat the beloved green bean casserole that my mom always makes, so I'm making them green beans they'll actually eat.
Possibly broccoli rice and cheese casserole as they will eat that one.
I also found a recipe for Monkey Bars that looks great, since I've got some bananas that are getting on the ripe side and I don't want to make banana bread since I'm making pumpkin bread. I'm weird like that.
Thursday- Gorging myself on Thanksgiving at my parents
Friday- leftovers and hopefully enchiladas at hubby's aunts.

Check out OrgJunkie for more great meal plan ideas, and recipes. I'm sure everyone will have some awesome Thanksgiving recipes this week.

MPM

This week I'm trying to buy the minimum amount of groceries I can. The past month has been a total restock of groceries from the move. If you saw how sparse my cabinets and fridge were to prepare for our move, you'd understand the restock that I've had to do the past few weeks. I think I've finally built up enough to not have to go on another grocery shopping spree and just get the basics.

Monday-Chicken & Noodles. I'm actually going to try and take a crack at doing this home made. Should be interesting but looks actually pretty simple. Thanks to Boo Mama's Soup/Crock Pot Spectacular for that recipe find.

Tuesday- Soft Tacos

Wednesday- Pork Chops- Scalloped potatoes and broccoli

Thursday- Spinach Tilapia I didn't get to it last week.

Friday- Pizza

MPM I've Missed You

I've been on a long hiatus from MPM. The main reason was I was working and unable to get my post up within a reasonable time, plus the whole move thing set me back.

I'm so glad to be back now that I'm at home. I just thought I'd go ahead and jot it down. It's really nothing spectacular.

Monday-Spaghetti

Tuesday- Barb's Jalepeno Garlic Tilapia I may be breaking the law on this, but I'm going to try it without the Jalepeno just add the spinach. A co worker made something similar with spinach and tilapia and it was awesome.

Wednesday- Hamburger Helper

Thursday- Buffalo Wing Soup from the Crock Pot Lady

Friday- Egg Sandwiches

Check with Org Junkie for more great menu ideas and recipes.

It's been a few weeks since I've done an MPM post. Doesn't mean I haven't made a plan, it just hasn't been anything to blog about, not that that's stopped me before.

Sunday: Smothered Porkchops

Tuesday: Chicken Casserole

Wednesday: I'm unsure about, I totally forgot to get tortilla's to make fajaitas. So I guess it will just be steak.

MPM

I didn't have a plan last week. The hubs and I pretty much winged it since the kids were gone. I can't wing it this week since their back. I'm also on a very limited budget this week so things were improvised to use what we have.

Monday-? Not sure since my parents are in town to bring the kids back. They may want to treat us to pizza or we may just be eating sandwiches. :)

Tuesday- Grilled Steaks with Mac & Cheese and Green Beans

Wednesday- White Chili

Thursday- Leftovers or Egg Sandwiches

Friday- Whew we made it Pay Day! Were going out.

MPM

This week I'm scrounging the freezer and the pantry! It's going to be little more challenging now that I do plan my meals weekly. I pretty much only buy enough meat and what not for the week. My goal is to have less than a $50 grocery bill. I think I can do it!

A couple of you asked for my recipe for Creamy Crockpot Chicken Alfredo its below the weekly plan.

Sunday-Chicken Enchalida's with spanish rice

Monday-Good ol faithful Spaghetti and meatsauce

Tuesday- Sirloin Steak (frozen) Patties-nothing fancy here- with Broccoli and Scalloped potatoes.

Wednesday- I have tons of chicken and a crockpot, so I'm just going to throw a bunch of stuff in and hope for the best.

Thursday- Chili Cheese Hot Dogs with Fries (can you tell I'm scrounging?)

Friday- Pay Day thank goodness!

Now I will be honest and say I got this recipe from another MPM but I have no idea who it was. I'm really good about writing down the recipe but not giving credit where it's due. So if it's yours please let me know!

I also didn't do it in the crockpot since it requires less than 4 hours for the full cook in the process. Well since I work an 8 hour day, I didn't want to over cook the chicken. It still turned out great and everyone ate it up.

4 Chicken Breasts

Dry Italian Dressing seasoning

A package of cream cheese

2 cans of cream of chicken soup

Chopped onion ( I didn't add onion in mine instead I used canned mushroom pieces)

This is the over the stove version-

Sprinkle Italian seasoning over chicken and then brown the chicken. In the mean time boil whatever noodles you prefer fettuccine, spaghetti, even egg noodles work well. Remove chicken from heat and set aside. In pan add soup and cut up cream cheese on low heat. Once the cream cheese and soup has melted to a saucy condition add cut up chicken breasts and mushrooms. I also add a little more of the Italian seasoning as there was plenty left over. Heat through for another 5 minutes or so. Drain noodles and add sauce.

This was really a no brainer recipe which is +1 for me and +1 that hubby and kids loved it.
