MPM



Well we really didn't stick to the plan at all last week. I didn't think we would since we had a short week. I think we'll be back on track this week. All the activities are winding down for the end of the school year and that's kind of whats made it hard to stick to schedule. I hope everyone had a Happy Mother's Day! Im actually doing this post Saturday evening so I haven't indulged yet on my day.

Sunday- Ribs in crock pot. I was craving them and I still really wouldn't have to cook so it works for me for Mom's day dinner.

Monday- The good old stand by Spaghetti and Meatsauce with a salad and bread.

Tuesay- Cheesy chicken enchalida casserole

Wednesday- Crockpot meatloaf with some smashed potatoes and a veggie of some kind.

Thursday- Hamburgers on the grill

Friday- Leftovers or go out I'll leave it up the hubs.

MPM


The weeks are just flying by so quickly and its time to plan out the menu for the week. I usually do my plan on Saturday since that is grocery day.
This week the hubby will be out of town so the planning will be a little more geared to what I like. :) He's the pickiest loves to eat kind of man I've ever seen.

Sunday-The yummy roast recipe thats been going around..I just have to find it.

Monday- Beef Enchalidas

Tuesday- Hot Dogs

Wednesday- Chicken Green Bean Casserole ( I didn't get to this last week.)

Thursday- Meat Loaf and baked potatoes

Friday- Left overs or sandwiches

Saturday- Out to eat

Meal Plan Monday



My hero orgjunkie hosts the weekly meal plan menu. So far I think Ive been doing this for a month now and just love how much easier it makes life.
Since I am also doing her 30 day challenge and I had chose the kitchen. TThis means we need to eat what we have so I can get stuff perged out before buying more stuff that we probably don't need yet.
Monday- Ham and Broccoli Casserole (recipe below)
Tuesday- Porcupine Meatballs with Egg noodles
Wednesday- Fish Filets with corn
Thursday- Taco Soup
Friday- Leftovers or grilled cheese and soup

Broccoli and Ham Casserole
1 pkg frozen broccoli
1/2 Cup chopped onion
2tbsp butter
1 can cream mushroom soup
1 can celery soup
1 soup can of milk
1 cup shredded cheddar cheese
3 cups cooked ham
2 cups raw minute rice
1 tsp worsteshire sauce

Cook frozen broccoli according to package directions, I usually just nuke it in the microwave with a little bit of water. Just before it gets tender drain and set aside.
Saute onion and butter and set aside. In a large bowl combine soups, milk and cheese into and mix. Stir in broccoli, sauted onion, ham, rice, and worstechire. Spoon mixture in casserole and bake for 40-50 minutes at 350.

My husband really likes it and hes not a big casserole person. Kids seem to like it too.

Menu Plan Monday

Cool Mom Picks

This is my first menu plan Monday and I'm a little late to the party. I have been lurking through the great recipes and menus for a few weeks now. I love this idea! I have pretty much been doing a bi-weekly plan since January and it's really eased the stress level just knowing what is going to be fixed for dinner. I try to stick with a daily theme just to keep things different. I'm just not big on eating chicken three or four times a week. Sometimes it never goes through as planned but A plan is better than No plan.
-Monday is usually crockpot night as thats boyscout night. This Monday will be shredded crockpot chicken.
-Tuesday is pasta night -Hamburger Mac & Cheese
-Wednesday is meat and potatoes night -Steak filets and baked potatoes. Hubbys always up for grilling.
-Thurdsay is tex-mex night -Beef enchalidas with chips and salsa
-Friday is pay day we usually go out to eat every other Friday.
