MPM



This week I'm scrounging the freezer and the pantry! It's going to be little more challenging now that I do plan my meals weekly. I pretty much only buy enough meat and what not for the week. My goal is to have less than a $50 grocery bill. I think I can do it!




A couple of you asked for my recipe for Creamy Crockpot Chicken Alfredo its below the weekly plan.




Sunday-Chicken Enchalida's with spanish rice




Monday-Good ol faithful Spaghetti and meatsauce




Tuesday- Sirloin Steak (frozen) Patties-nothing fancy here- with Broccoli and Scalloped potatoes.




Wednesday- I have tons of chicken and a crockpot, so I'm just going to throw a bunch of stuff in and hope for the best.




Thursday- Chili Cheese Hot Dogs with Fries (can you tell I'm scrounging?)




Friday- Pay Day thank goodness!


Now I will be honest and say I got this recipe from another MPM but I have no idea who it was. I'm really good about writing down the recipe but not giving credit where it's due. So if it's yours please let me know!


I also didn't do it in the crockpot since it requires less than 4 hours for the full cook in the process. Well since I work an 8 hour day, I didn't want to over cook the chicken. It still turned out great and everyone ate it up.


4 Chicken Breasts

Dry Italian Dressing seasoning

A package of cream cheese

2 cans of cream of chicken soup

Chopped onion ( I didn't add onion in mine instead I used canned mushroom pieces)


This is the over the stove version-

Sprinkle Italian seasoning over chicken and then brown the chicken. In the mean time boil whatever noodles you prefer fettuccine, spaghetti, even egg noodles work well. Remove chicken from heat and set aside. In pan add soup and cut up cream cheese on low heat. Once the cream cheese and soup has melted to a saucy condition add cut up chicken breasts and mushrooms. I also add a little more of the Italian seasoning as there was plenty left over. Heat through for another 5 minutes or so. Drain noodles and add sauce.


This was really a no brainer recipe which is +1 for me and +1 that hubby and kids loved it.

I really wish I could start doing this.

You wouldn't be willing to call me on mondays and make me think up a menu plan and post it, would you?!?!

Really. I wanna start doing this. Cuz, believe me when I say that I NEED help in the kitchen! :-p
