Soups On!
Boomama is having a soup carnival. I love to make soup and hubs loves to eat my soups so this carnival is right up my alley. I have two soup recipes for you and both are quite hearty.
Stuffed Green Pepper Soup
2lbs ground beef
2 quarts tomato juice
1 can diced tomatoes (undrained)
2 cups cooked white rice
2 cups chopped green peppers
2 beef boullion cubes
1/4 cup packed brown sugar
2 tsp salt
1 tsp pepper
In large saucepan or Dutch oven brown beef and drain. Add remaining ingredients, bring to a boil. Reduce heat; cover and simmer 30-40 minutes or until the peppers are tender. Yields about 10 servings. You can also do it in the crock pot and add more tomato juice if more liquid is needed.
Beef Cabbage Soup
2 lbs lean beef
2 cans diced tomatoes
1 can tomato sauce
4 beef boullion cubes
2 med. shredded carrots
1 lg onion
2 tbsp white vinegar
1/4 cup sugar
1/2 tsp salt pepper
2 quarts water divided
3 cloves garlic
1 head cabbage cored and cut
In lg pot brown ground beef, add diced tomatoes, tomato sauce, boullion cubes, carrots, onions, vinegar, sugar, salt & pepper. Pour in 1 quart of water. Bring to boil. Stir to break up beef. Once soup comes to boil cover and simmer 30 minutes. Pour in another quart of water and return to slow boil. Add garlic and cabbage. Simmer 25 minutes or until cabbage is tender.
My husband asks for this all the time. I'll probably have to add it to the menu for next week.
